When our styling and photo crew assembles the recipes presented in these pages in order to photograph them, we taste the finished dishes, as you’d expect. Sometimes we even devour them—after we’re finished shooting, of course. I’m happy to say that they consistently get rave reviews, and it’s always fun to guess which ones will earn the most votes in these informal tastings.
For this issue’s shoot, I suspected there’d be no surprises because for the feature “Health by Chocolate,” we needed to prepare a chocolate fondue. Not just any chocolate fondue, mind you, but the favorite recipe of Uma Thurman, developed by Los Angeles nutrition coach Jackie Keller. Keller helped Thurman slim down after the birth of her son to get in shape for the action flick Kill Bill. Susan Sarandon and Will Ferrell are among Keller’s other chocolate-loving celebrity clients, and she understands that like everyone else, figure-conscious actors will follow healthy diets more successfully (and happily!) if they include small portions of special treats.
How did we like the fondue? Well, we dipped every bit of fruit we had at our disposal, along with just about any other handy edible that we could skewer—and then went out to buy more fruit! Because it took a lot of melted dark chocolate to fill the sizable fondue pot used for the photo, there was a considerable amount of the stuff left over. Every day for the rest of that week, someone would take it out of the fridge and warm it up for more dunking.
Speaking for the women among the crew, I don’t think we’ve ever had a happier shoot. Speaking for myself, a heretofore exclusively milk chocolate lover, this fondue recipe is dynamite. And just think, with all that indulgence, we were getting the health benefits of dark chocolate on top of the much-better-known vitamins, minerals, and fiber of so much fruit! We were feeling almost righteous. And did I mention happy?
